For some of the products, you will receive special incentives from the product companies when you placed their products in certain shelves. You should also line up your products largest to smallest left to right, when there is more than one size of a product. The reasoning behind this is that people read left to right and look naturally to their left first.
By placing your bigger products on the left you are more likely to have customers take the bigger size, which makes you more profits. Empty space should be minimized as it uses up precious space in your store and does not look good.
Your shelves should be placed with just enough space above the products to reach them comfortably, there should not be a lot of empty space between shelves. You should always ensure that your shelves are well stocked as this creates an impression of abundance and you will also lose sales if your shelves are empty.
